Choice 1 is certain to work at the expense of a new number and unfamiliar phone
Choice 2 gives you a new number but a familiar phone
Choice 3 keeps your number and your phone, but has more limited data and minutes.
Choice 2 likely gives the best value combination.

TELUS recently launched new travel passes for Europe that may be a good solution (talk, text & data from $50). You'll need to make sure you have international roaming provisioned on your phone.

Only thing to add would be that Choice 2 has a cost of $35 to unlock your device if its not already. Consider that against the cost of the pass but if you plan to use your phone abroad in the future, could be a good investment.
