If you look at the tech specs on the US and Canadian Apple sites, you can compare what bands are available. My understanding is the only difference is the US ones are compatible with 5G millimetre wave, but that may not be true of all versions.

5G only applies to the iPhone 12 though. Canada will eventually get the millimetre wave but it hasn't gone to auction yet.
