So getting a PS5 for Christmas want to hard wire to network the question I have is can I run a switch off the wire that runs into my DVR or should I run it off one of the other ports and run a whole new wire to TV area. I have seen it in the diagrams but want to make sure before I do it.

I have a gigabit switch behind my PVR and have had it set up that way for years. Works fine for me.

It's functionally the same either way assuming you use a decent gigabit switch. It boils down to what makes sense for you logistically. Running cable is more cost/energy efficient since you don't need to buy/power another device. Using a switch is probably easier if you need to go through walls to run a new cable.
