The new TELUS TV Digital Box with cloud recordings supports 6 concurrent recordings. This is independent of how many streams (live or On Demand) that you're watching.
If you have a legacy Optik TV HD or 4K PVR, the maximum number of concurrent recordings will depend on your internet bandwidth; the maximum on a 250 Mbps service would be 6 concurrent recordings. It's worth noting, however, that recordings count towards your stream count, which also has a maximum concurrency of 6. So you can watch 3 channels and record 3 different channels, or watch 2, record 4 etc.
You shouldn't need more than 1 actual physical PVR; all Optik TV Digital Boxes and PVRs are networked. Even if you have multiple PVRs, only one will be the designated PVR, while the others will simply act as Digital Boxes.
