Pik TV is a more scaled down TV service offering. It is not designed to replace Optik TV. Optik TV offers more features and more channels.

If I recall, it is a $10 premium to have Optik instead of PikTV. Think of it as paying $10 for Mav TV, plus you get the US networks as well!

Without getting into too many details - every time a channel gets added to Pik TV, there is infrastructure required to enable the 'feed'. Channels get added based on demand, and MavTV just isn't that popular.
As NFtoBC mentioned, you could opt for Optik Essentials which has a regular price of $40 and add MavTV a la carte for $4 or $5. There are some benefits to the higher price of Optik, such as the US feeds (ABC, CBS, NBC, Fox and PBS), access to 4K HDR, a PVR and equipment you don't have to purchase. You will pay more than the regular price of Pik (currently $20) though.
