Use the fully qualified domain name of your POP3 or IMAP server and make sure you are using the correct port.
Outbound email will have to likely be on Telus' outbound SMTP servers on your mobile phone - but different on Wi Fi.
Make sure you get a service which allows you to send outbound email on it so you don't have to mess with that.
