I wanted to know what exactly would be the difference with having a guest ssid setup with the main one. Like what would be good about setting it up?

Would there be any other restrictions for the guest network? Like the max that can be used on it or like a slower speed?

NO, the guest SSID is not manageable in those ways, it is a very basic separation from your regular network. If you wish to accomplish more management of a guest network, a second router would be your best option.
