You are correct. I have done this numerous times in Mexico and other places. Just turn off cellular data and roaming and you can keep your phone turned on, to receive texts and view any incoming phone calls that you receive. You will only activate Easy Roam if you send a text or answer or make a phone call. I have never received a charge this way over a good many trips. Also, get WhatsApp for texting. You can text anyone on the app and you can search people as well. It looks like regular texting but is 100% free and works over WiFi.
